Any way, we are going to talk about the nutritional benefits of kidney beans, the main protein of this dish. Kidney beans are thought to be a “whole food” because of all the nutrition they provide such as dietary fibers, minerals, vitamins, starch, antioxidants, and phenolic acids. They are a great source of iron, manganese, folate, phosphorus, potassium and magnesium.
This particular bean also has a number of wonderful health benefits. Some of those benefits are…
- lowers cholesterol
- reduces heart disease risk
- controls blood sugar
- combats diabetes
- helps treat and prevent certain cancers
- and aids in weight loss
Be sure to always properly cook dried raw kidney beans. When eaten raw or improperly cooked they can cause illness. Kidney beans contain a toxin called phytohaemagglutinin which can cause sever health issues. That being said ALWAYS soak dried raw kidney beans and discard the water when done. Caned kidney beans are fine to use right out of the can. Of course follow any instructions given on the cans label.
